We are a small crew running a wood-fired trailer seven days a week. We hire for personality first.
Technique can be taught. Caring about the person at the window cannot. What we do best is great spontaneous hospitality, and that starts with whoever is standing there when somebody walks up.
Trailer Crew

On a given shift you might be taking orders and talking to regulars, prepping and portioning, stretching dough, working the line, or reading the fire and pulling bread at the right second. Everyone learns all of it. Nobody stays on one station.
You do not need restaurant experience. You do need to want to learn, because there is a lot to learn: a live wood oven is not a machine with a dial, and getting good at it takes months of paying attention. Lucky has been doing it for sixteen years and still watches every bake.
What we are looking for
Personality
You like people. You remember faces. You would rather have a real conversation at the window than get through the line faster.
Willingness to learn the line
Prep, portioning, assembly, timing. You want to get better at it, not just get through the shift.
Interest in the oven
The fire is the hardest thing here and the most rewarding. If managing a 600-degree wood oven sounds interesting rather than intimidating, say so.
Room to grow
We are building something bigger than one trailer. Every person we hire should have the potential to run a location one day. If that is what you want, tell us.
What you get
Real training on a live fire from someone who learned it in Puglia. A small team where what you do is visible. Food on shift. And a path, if you want one, that does not end at this trailer.
